Spiced Vanilla Oats with Fig

Nothing is more comforting or filling than a nice bowl of warm oatmeal and the addition of vanilla and spice makes this the coziest breakfast you could ever want! I topped mine with stewed berries, late summer strawberries and figs, but toppings are your choice! Making it the perfect customizable breakfast!

Spiced Vanilla Oatmeal

  • 2 cups gluten free rolled oats
  • 1 cup vanilla non-dairy milk (I used oat)
  • ½ cup water
  • ½ cup non-dairy vanilla yogurt
  • ¼ cup maple syrup
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ¼ tsp ground ginger

Toppings:

  • Extra vanilla yogurt
  • Stewed berries
  • Fresh strawberries
  • Fresh sliced figs
  • Hemp seeds
  • Toasted coconut flakes
  • Drizzle of maple syrup

How To:

  1. In a small pot add your water and non-dairy milk, bring to a boil. Once it is boiling, add your rolled oats and stir to combine.
  2. Turn your heat to low and let simmer for 4-5 minutes or until oats have softened and absorbed most of the liquid, making sure to stir frequently.
  3. Once your oats have softened, turn off the heat and add your vanilla yogurt, maple syrup, vanilla extract, cinnamon, nutmeg and ground ginger. Stir to combine.
  4. If your oats are too thick feel free to add more non-dairy milk. Serve warm with desired toppings!
