Salted Maple Pecan Pie Bars

These easy, no-bake bars are all the warm flavors of pecan pie, but totally vegan, gluten, refined sugar and oil free! Packed with healthy fats, protein and nutrient rich dates all paired with maple and flaked salt this bar gives you a delicious mix of salty and sweet, for the best afternoon snack or pre-workout fuel!

  • 14 pitted medjool dates
  • 1 cup pecans
  • 2 tbsp vanilla protein powder
  • 1 cup rolled oats
  • 1 tsp vanilla extract
  • ¼ tsp sea salt
  • ¼ cup maple syrup
  • 1 tsp cinnamon
  • Flaky salt
  • Chocolate or nut butter drizzle


Serving Suggestion:

Top with a drizzle of melted chocolate, nut butter or flaky sea salt.

How To:

  1. To a high speed blender or food processor add your medjool dates, pecans and rolled oats. Blend or pulse until they are broken down into bits, or close to a fine meal.
  2. Once they are blended, add your remaining ingredients excluding flaked salt and drizzle: vanilla protein powder, vanilla extract, sea salt, maple syrup and cinnamon.
  3. Blend until a cookie dough like texture is formed, if you put a bit of it in your fingertips and press the mixture should stay together.
  4. Add this dough to a lined baking pan and cool in the fridge to set for 1-2 hours.
  5. Once cooled, remove from the baking pan and slice into 10-12 even bars. Top with your choice of melted chocolate or nut butter and flaky sea salt. Serve and enjoy! Store in the fridge in an airtight container.
