Roasted Carrots w/ Maple Tahini

Sweet, a hint of spice, creamy and crunchy, these whole roasted carrots are the perfect side to any meal, and with thanksgiving on the way, they fit right in!

Whole Roasted Carrots

  • 1 bunch of whole peeled carrots
  • 1 tbsp olive oil
  • 1/2 tsp sea salt
  • 1/4 tsp pepper
  • 2 sprigs of fresh rosemary or thyme chopped

Maple Tahini

  • 1/4 cup creamy tahini
  • 2 tbsp maple syrup
  • 2 tsp apple cider vinegar
  • 1/2 tsp cumin
  • 1/4 tsp garlic powder
  • Salt and Pepper to taste


Serving Suggestion:

Serve warm drizzled with Maple Tahini!

How To:

  1. Start by preheating your oven to 400 degrees Fahrenheit.
  2. Then, to a lined baking sheet add your whole peeled carrots and top with a drizzle of olive oil, salt, pepper, and add fresh herbs.
  3. Roll carrots around until they are fully coated, add more olive oil if needed.
  4. Place in the oven and roasted at 400 for 25-30 minutes, or until they are fork tender and crispy at the ends.
  5. While carrots are roasting, prepare your maple tahini by adding all ingredients to a small bowl and whisking together until fully combined. Taste and adjust seasoning as necessary.
  6. Once carrots are done roasting, remove from the oven and serve to topped maple tahini and a sprinkle of fresh herbs!
