Pumpkin Spice Chia Pudding

Vegan, gluten, refined sugar and oil free, this healthy and shockingly filling pumpkin chia pudding is both delicious and good for you! Like a pumpkin pie in a cup!

  • 1/2 cup chia seeds
  • 3/4 cup oat milk (or other creamy non-dairy milk)
  • 1/2 cup pumpkin puree
  • 1/4 cup non-dairy yogurt
  • 1/4 cup maple syrup
  • 2 tsp pumpkin pie spice
  • 1 tsp vanilla extract
  • Pecans, Pumpkin seeds & Chai Spice Granola to top


Serving Suggestion:

Serve cold topped with pecans, extra maple syrup, pumpkin seeds, nut butter or chai spiced granola!

How To:

  1. In a small mixing bowl, combine all ingredients for pumpkin pudding including, chia seeds, oat milk, pumpkin puree, non-dairy yogurt, maple syrup, pumpkin pie spice and vanilla extract. Stir until fully combined.
  2. Cover and store in the fridge overnight for it too firm.
  3. Divide evenly amongst four bowl in the morning and top with your desired toppings! I used pecans, chai spiced granola, pumpkin seeds and cinnamon!
