Pistachio Walnut Baklava

One of my absolute favorite layered desserts! Crispy and sticky layers of crunchy walnuts, pistachios and phyllo dough, made completely vegan using non dairy butter, maple syrup and coconut sugar!

  • 1 lb phyllo dough*
  • 3 cups walnuts
  • 1 1/5 cups pistachios
  • 2 1/2 tsp cinnamon
  • 1 cup softened vegan butter
  • 1 cup coconut sugar
  • 1 cup water
  • 1/2 cup maple syrup
  • 2 tsp vanilla extract

Serving Suggestion:

Top with additional chopped nuts and a sprinkle of cinnamon!

How To:

  1. Start by thawing your phyllo dough according to package directions.
  2. Then, preheat your oven to 350 degrees Fahrenheit. Next, butter a 9inx13in baking dish and set aside.
  3. Next, add your walnuts and pistachios to a food processor and pulse until finely chopped, scraping down the sides as needed.
  4. Then, add in your cinnamon and stir until fully combined.
  5. To the buttered baking dish, add two sheets of phyllo dough, brush on a layer of melted vegan butter and top with an even layer of 1/3 cups of the nut mixture.
  6. Repeat this step until all of the nuts are used and you have about 4 sheets of phyllo dough left. Top with the remaining sheets of phyllo dough and a final brush of butter.
  7. Then, cut your baklava into even slices, do not cut all the way through the baklava, leave about 1/2 inch uncut at the bottom.
  8. Place in the oven and bake for 40-45 minutes, or until the phyllo dough is golden brown.
  9. While baklava bakes, make your coconut syrup by combining 1 cup water with 1 cup coconut sugar in a small pot on medium heat.
  10. Warm until mixture starts to boil, then remove from heat and add your maple syrup and vanilla extract. Stir until fully combined.
  11. Then, add back to the burner on low heat, and let mixture simmer for about 20 minutes, stirring often.
  12. When baklava is done baking, remove from the oven and evenly pour coconut sugar syrup on top.
  13. Let baklava cool completely. Once cooled slice baklava all the way through, serve and enjoy!

*if using store bought dough, check ingredients list to make sure they are vegan friendly
