Vegan, gluten and refined sugar free, these pistachio cardamom baked donuts with blood orange glaze is the perfect morning or afternoon pick me up!

Pistachio Cardamom Donuts

  • 2 1/4 cup gluten free 1:1 baking flour
  • 1/2 cup coconut sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cardamom
  • 1/4 tsp sea salt
  • 1 1/2 cups non dairy milk
  • 1/4 cup melted coconut oil
  • 2 tsp vanilla extract

Blood Orange Glaze

  • Juice from 3 blood oranges
  • 1 cup powdered monk fruit sweetener (or regular powdered sugar if not refined sugar free)
  • 1 tbsp blood orange zest

Serving Suggestion:

Serve topped with blood orange glaze and additional chopped pistachios!

How To:

  1. Start by preheating your oven to 400 degrees. Next, spray 2 donut pans with non-stick spray, set aside.
  2. To a large mixing bowl add all of your dry ingredients, gluten free baking flour, coconut sugar, baking powder, baking soda, cardamom and sea salt. Stir to combine.
  3. To that same mixture, add your non-dairy milk, melted coconut oil and vanilla extract. Whisk until fully combined, do not over mix!
  4. Next, gently fold in your chopped pistachios.
  5. You can either spoon the mixture into the donut molds, or you can add mixture to a piping bag and fill until each donut mold is about ¾ of the way filled.
  6. Bake for 12 minutes. If you only have one donut pan, once your first batch is cooked, remove and place on a cooling rack and wait for the pan to cool down before baking your next batch.
  7. While donuts are cooling, make your blood orange glaze by combining all ingredients in a bowl and whisking until smooth.
  8. Once donuts have cooled, dip each donut in the blood orange glaze, give them 5-10 minutes for the glaze to set. Serve and enjoy!
