Mom's White Wine Pasta

This light and healthy version of my Mom’s Spinach White Wine Pasta with the addition of tuscan kale and blistered tomatoes is a weekly staple! This flavorful and delicious sauce requires simple ingredients but packs a punch of flavor! My personal childhood favorite!

Pasta

  • 1 box pasta of your choice
  • 1 cup of ribboned tuscan kale
  • 2 cups of spinach
  • 2 cups of cherry tomatoes
  • 1 handful of ribboned basil
  • 1 handful fresh parsley  

Garlic White Wine Sauce

  • 2 tbsp extra virgin olive oil
  • 3-4 medium shallots finely diced
  • 4-5 cloves of minced garlic
  • 1 tbsp italian seasoning
  • 1 tsp dry basil
  • 1 tsp dry oregano
  • ½ tsp crushed red pepper
  • ¼ tsp black pepper
  • ½ tsp sea salt
  • Juice from ½ lemon
  • 1 cup of white wine
  • ½ cup reserved pasta water

How To:

  1. Bring salted water to boil and cook pasta according to box directions, make sure to reserve ½ cup of salted pasta water and cook pasta to al dente, your pasta will cook slightly in the sauce later so do not overcook!
  2. While pasta cooks, heat 2 tbsp extra virgin olive oil in a saute pan on medium heat. Once heated, add your diced shallots to the pan and cook until softened.
  3. When you shallots have softened, add in your minced garlic and cook for an additional 1-2 minutes.
  4. Then, add your seasoning, italian, dry basil, oregano, crushed red pepper, black pepper and sea salt. Stir to combine and let cook for another 1-2 minutes.
  5. Next, add in your white wine and juice from ½ lemon. Let this reduce, should cook down for 4-5 minutes.
  6. Once your wine has reduced, add your ribboned tuscan kale and cherry tomatoes. Cook until kale begins to soften and tomatoes start to blister.
  7. Add reserved pasta water to the pan then add your spinach, basil and parsley. Stir to combine.
  8. Once your spinach is fully wilted, add in your pasta and stir until pasta is fully coated, turn off your burner.
  9. Important Mom step: Let your pasta sit in the sauce for up to 5 minutes in the pan to let it fully “soak in all the goodness” and enjoy! This pasta is also amazing as leftovers the next day, it gives the pasta more time to soak up the sauce, so make as much as you want and save some for later!
