Mom's French Toast Casserole

A vegan twist on my #1 favorite Christmas morning breakfast! This is something I looked forward to every year and has been one of the biggest thing I have missed since becoming vegan. This meat and dairy free take tastes exactly like the original! Perfectly sweet, savory and spiced!

  • 1 tbsp vegan butter
  • 2 packages of vegan breakfast sausage
  • 2 peeled and thinly sliced apples
  • 2 containers of Just Egg
  • 2 cups of unsweetened vanilla non dairy milk
  • 1 cup vegan sweetened condensed milk*
  • 2/3 cup maple syrup
  • 2 tsp cinnamon
  • 1 tsp nutmeg
  • 1 large loaf of Italian bread cut into 12 even slices

Serving Suggestion:

Serve hot topped with extra maple syrup and a sprinkle of cinnamon!

How To:

  1. Start by preheating your oven to 350 degrees Fahrenheit. Then, butter a large glass baking dish and set aside.
  2. Then, dice your vegan sausage into small crumbles or bite sized pieces and slice your apples.
  3. Next, to a medium sized skilled, add 1 tbsp vegan butter and place on medium heat.
  4. When butter is warm and melted, add your vegan sausage and cook until it begins to brown. Then, add your sliced apples and cook until soft and tender, add more butter if mixture is too dry.
  5. In a separate bowl, combine your vegan egg, non dairy milk, vegan sweetened condensed milk, maple syrup and spices. Stir until fully combined.
  6. Next, add one layer of bread to the bottom of the buttered baking dish, for my loaf it was 6 pieces.
  7. Then, spread all of your sausage and apple mixture evenly on top. Next add a second layer of bread slices.
  8. Pour the liquid mixture evenly over the top, making sure all of the bread is soaked.
  9. Then, place in the oven and bake for 1 hour.
  10. Once cooked, remove from the oven, serve hot and enjoy! If you plan to have this for the next morning, you can keep fresh wrapped tightly in the fridge.

*You can either use store bought vegan sweetened condensed milk, or you can make your own. Make your own by combining 1 can of coconut cream and 1/3 cup sugar into a small pot. Place on medium heat and stir. When mixture begins to boil, reduce heat to simmer. Allow mixture to simmer, stirring often for about 35-40 minutes, until mixture is thick and you reach your desired consistency.
