Hummus & Avocado Toast

This is my go-to late summer, early fall loaded avocado toast! Perfect for that transition when it’s too hot to eat warm porridge, but you’re just way too excited for the fall chill! Spiced butternut squash hummus paired with creamy fresh avocado, crunchy bread and all the toppings, this is the best morning combo!

  • 2 ripe avocados
  • 4 slices fresh seeded bread
  • 1 cup butternut squash hummus
  • ¼ cup diced red onion
  • 1 handful sweet pea shoots or sprouts of choice
  • 2 tbsp everything bagel seasoning
  • Juice from ½ lime

How To:

  1. Start by toasting the fresh seeded bread until golden brown. While bread is toasting, slice two ripe avocados in half and peel.
  2. Once peeled, slice your avocado lengthwise, set aside. Dice ¼ cup red onion.
  3. When bread is done toasting, add ¼ cup butternut squash hummus to each slice. Top each slice with ½ avocado, 1 tbsp diced red onion, sweet pea shoots, ½ tbsp everything bagel seasoning and a little bit of lime juice to top. Enjoy immediately!
