Fresh Mango Pineapple Salsa

This refreshing and easy to assemble mango pineapple salsa is the perfect addition to any spicy summer dish! Sweetness from the fresh fruit, paired with zesty lime, acidic tomatoes and spicy peppers are the best salsa combination! Try with my pulled jackfruit tacos.

  • 1 cup diced and peeled mango
  • 1 cup diced pineapple
  • ½ red bell pepper
  • ½ cup diced cherry tomatoes 
  • ¼ diced small red onion
  • 2 tbsp minced cilantro 
  • 2 tbsp lime juice
  • ½ poblano pepper
  • 1 jalapeno pepper
  • ½ tsp salt

How To:

  1. Start by removing the skin from both your mango and pineapple. Once peeled, dice both into cubes.
  2. Next prepare dice your bell pepper, tomatoes, red onion, poblano and jalapeno into cubes, chop smaller if you want a finer salsa, we like ours a little chunky.
  3. Mix all ingredients to combine, finish with minced cilantro, lime juice and salt. Taste and adjust. Enjoy with your favorite salted tortilla chips or on tacos!
