Date Sweetened Seedy Granola

This naturally sweetened crispy granola is the perfect addition to any breakfast! This granola is packed with protein, healthy fats and omega-3’s without any of the oil and sugar you typically find in a store bought granola. Serve with yogurt, oatmeal, fresh fruit, non-dairy milk, etc. the options are endless!

  • 2 ½ cups of gluten free rolled oats
  • ½ cup pumpkin seeds
  • ½ cup walnuts
  • ½ cup chopped or sliced almonds
  • ¼ cup shredded coconut
  • ¼ cup flax seeds
  • ¼ cup hemp seeds
  • ¼ cup chia seeds
  • 2 tsp cinnamon
  • 1 tsp nutmeg
  • ½ tsp salt
  • 1 ½ cup pitted & soaked medjool dates
  • ¼ cup maple syrup*
  • 2 tsp vanilla

How To:

  1. Ahead of time, soak your 1 ½ cups of pitted medjool dates in 2 cups of water. Preferably overnight but if you don’t have time, try to soak for at least two hours.
  2. Once your dates have soaked you can begin prepping the other components. Start by preheating your oven to 300 degrees.
  3. While your oven preheats combine all dry ingredients into a large mixing bowl.
  4. Next, drain your soaked dates and add to a high speed blender with your maple syrup, vanilla extract and ¼ cup of water. Blend on high until smooth.
  5. Once blended, add to dry ingredients and stir until fully combined.
  6. Pour your granola mixture out onto a baking tray and spread to create an even layer.
  7. Bake for 1 hour, stirring every 10-15 minutes. Once your granola appears to have browned, remove from your oven and let cool completely. Once cooled you can remove from the baking tray and store, or add to your favorite dish right away!

*The maple syrup is optional, if you want your granola less sweet omit maple syrup and add slightly more water when you blend your dates.
