Cinnamon Swirl Coffee Cake

Vegan and gluten free, this fluffy, sweet and spiced coffee cake is truly the best morning breakfast, or dessert! Paired with maple cinnamon glaze, it is the perfect fall bake!

Coffee Cake

  • 1 ½ cups non-dairy milk
  • 2 tsp apple cider vinegar
  • ½ cup sugar
  • ½ cup non-dairy yogurt
  • 2 tsp vanilla extract
  • 2 cups gluten free 1:1 baking flour
  • 1 tbsp baking powder
  • ½ tsp baking soda
  • ½ tsp sea salt

Cinnamon Swirl

  • 1 cup oat flour
  • 1 cup brown sugar
  • 2 tbsp cinnamon
  • ½ tsp sea salt
  • 2 tbsp solid vegan butter
  • 3 tbsp melted vegan butter

Maple Cinnamon Glaze

  • ½ cup coconut cream
  • ½ cup maple syrup
  • 1 tbsp cinnamon

Serving Suggestion:

Serve warm with your favorite hot coffee!

How To:

  1. Start by preheating your oven to 350 degrees fahrenheit and grease a square baking pan, or use a springform pan and line it with parchment paper.
  2. Using a large measuring cup, add the apple cider vinegar to the non-dairy milk and stir. Set aside, this is your vegan buttermilk, so it will curdle.
  3. Then, in a large mixing bowl, add all of your dry cake ingredients, gluten free flour, baking powder, baking soda and sea salt. Stir to combine.
  4. Then, add your sugar, non-dairy yogurt and vanilla extract. Once your buttermilk has sat for about 5 minutes, slowly add it to your mixture, whisking while you combine. Stir until fully combined, be careful not to overmix.
  5. Next, mix your cinnamon swirl filling by combining oat flour, brown sugar, cinnamon sea salt, melted vegan butter and finely diced solid vegan butter until fully combined.
  6. Then, add ½ of your batter to the baking dish and sprinkle half of your cinnamon swirl filling evenly on top. Next, add the other half of the batter and finish by sprinkling the rest of the cinnamon swirl mixture evenly on the top.
  7. Place in the oven and bake at 350 for 35-45 minutes (depends on your oven and size of baking dish you use) or until a toothpick test comes out clean.
  8. While your coffee cake bakes, make your maple glaze by combining coconut cream, maple syrup and cinnamon, taste and adjust to your desired sweetness by adding more maple for a sweeter glaze, or more coconut cream for a thicker, creamier glaze.
  9. Once your cake is done, remove from the oven and let cool for at least 20-30 minutes. Once cooled, slice and serve with a drizzle of maple cinnamon glaze and enjoy!
