Christmas Baked Pears

These baked pears filled with cranberries, pecans, oats, maple and spices could be a quick Christmas morning breakfast, a healthy dinner appetizer, or a light holiday dessert! Topped with your choice of either non dairy yogurt or vegan whipped cream!

  • 5 large Bosc pears cored and halved
  • 1 cup fresh cranberries
  • 1/2 cup chopped pecans
  • 1/2 cup gluten free rolled oats
  • 3 tbsp maple syrup
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 2 tbsp maple syrup to top
  • Dairy free yogurt or whipped cream to serve

Serving Suggestion:

Serve warm topped with vegan yogurt or whipped cream!

How To:

  1. Start by preheating your oven to 375 degrees Fahrenheit. Then, line a baking sheet with parchment paper and set aside.
  2. Next, half and core your pears and place onto the baking sheet skin side down, core side up.
  3. Then, to a medium sized mixing bowl, add your cranberries, pecans, rolled oats, maple syrup, cinnamon and nutmeg. Stir until fully combined.
  4. Evenly divide your filling amongst your cored pears, it is okay if some of the filling is spilling out, you want them to be stuffed!
  5. Next, top your pears with 2 tbsp of maple syrup, make sure to drizzle the maple on the tops of the pears that do not have filling. Optional - sprinkle the top with additional cinnamon and nutmeg.
  6. Then, place in the oven and bake for 25-30 minutes, or until pears are tender and filling is crispy.
  7. Once baked, remove from the oven and let cool slightly.
  8. Serve warm topped with vegan yogurt, a sprinkle of cinnamon and enjoy!
