Chocolate Covered Peanut Butter Cookies

The easiest, one bowl peanut butter cookies that are both sweet and salty! Drizzled with melted dark chocolate these super soft peanut butter dreams are a quick and delicious dessert!

  • 1 cup gluten free baking flour
  • 1 tsp baking soda
  • 1/4 tsp sea salt (if peanut butter is unsalted)
  • 1 cup creamy all natural peanut butter
  • 1 cup coconut sugar
  • 1/3 cup non-dairy milk
  • 1 tsp vanilla extract
  • 1/2 cup dark chocolate chips
  • Flaky sea salt

Serve with a drizzle of melted dark chocolate and flaky sea salt!

How To:

  1. Start by preheating your oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper.
  2. In a medium sized mixing bowl add your creamy peanut butter, coconut sugar, non-dairy milk and vanilla extract. Stir until fully combined.
  3. Then, to the same mixing bowl add your gluten free flour, baking soda and sea salt. Mix until fully combined.
  4. Next, using a cookie scoop or metal spoon, scoop out about 1 1/2 tbsp of cookie dough per cookie. Roll each into balls and place on cookie sheet.
  5. Once all cookies are laid out on the sheet, press down with the back of the fork to flatten the cookies, making a crisscross pattern.
  6. Place in the oven and bake for 10-12 minutes.
  7. Once cooked, remove from the oven and let cool for 5-10 minutes.
  8. While cookies cool, heat your chocolate chips up in microwave safe bowl for 30 second intervals at a time, stirring in between, until chocolate is fully melted.
  9. Drizzle the peanut butter cookie with melted chocolate and top with a sprinkle of flaky sea salt.
  10. The cookies will be fragile until they have fully cooled. Once cool, serve and enjoy!
