Banana Nut Granola

This banana nut granola is a delicious and healthy meal prep option for a quick and easy breakfast or afternoon snack!

  • 2 medium ripe mashed bananas
  • 1/2 cup maple syrup
  • 1/3 cup melted coconut oil
  • 2 tsp vanilla extract
  • 2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp ground ginger
  • 1/4 tsp sea salt
  • 1 cup pecans
  • 1 cup walnuts
  • 2 1/2 cups gluten free rolled oats

Serving Suggestion:

Serve with non-dairy yogurt or milk and fresh fruit!

How To:

  1. Start by preheating your oven to 325 degrees Fahrenheit. Then, line baking sheet with parchment paper and set aside.
  2. Then, to a large mixing bowl add your ripe bananas and mash until smooth. Then, add your maple syrup, melted coconut oil and vanilla extract. Stir until fully combined.
  3. To the same mixing bowl, add your spices, pecans, walnuts and rolled oats. Stir until everything is well combined.
  4. Spread this mixture evenly on your lined baking sheet.
  5. Place your granola in the oven and bake for 40 minutes, mixing halfway through. Check granola often to prevent burning on the edges.
  6. Once baked, remove from the oven and let cool completely. Do not touch the granola while it is cooling, this will keep the granola formed into clusters.
  7. Serve for breakfast or an afternoon snack and enjoy!
