Autumn Apple & Kale Salad

A big bed of curly kale with thinly sliced apples, red onion, dried cranberries, walnuts and pumpkin seeds, topped with a maple tahini dressing! Simple to throw together and packed with nutrient rich fall ingredients, this salad is all of the flavors of autumn, with none of the cooking!

Apple Kale Salad

  • 1 large bunch of curly kale or tuscan kale
  • 2 thinly sliced apples
  • 1/2 medium red onion thinly sliced
  • 1/4 cup walnuts
  • 1/4 cup dried cranberries
  • 1/4 cup pumpkin seeds

Maple Tahini Dressing

  • 1/3 cup creamy tahini
  • 2 tbsp maple syrup
  • Juice from 1/2 lemon
  • 1/4 tsp garlic powder
  • Pinch of salt
  • Water to thin


Serving Suggestion:

Add any additional toppings, like shredded Brussel sprouts, roasted squash, etc!

How To:

  1. To a small mixing bowl, add all of your tahini dressing ingredients except the water.
  2. Using cold, filtered water, slowly whisk water into the dressing too thin until you reach your desired consistency. Using a whisk for this is important, keep whisking until dressing is smooth and creamy.
  3. Then to two large bowls, or 4 small bowls, start by adding your chopped kale. Then layer on your thinly sliced apple, thinly sliced red onion, walnuts, cranberries and pumpkin seeds.
  4. Top the salad with your tahini dressing and serve!
