Apple Spice Stuffed French Toast

This decadent fall inspired stuffed french toast is the perfect slow Sunday morning breakfast! Stuffed with creamy non-dairy homemade cream cheese and topped with sweet and spiced apples pair perfectly with crispy golden brown french toast! My favorite way to start the season!

French Toast

  • 6-8 slices of bread
  • 1 cup non-dairy vanilla milk
  • 1 tbsp vegan egg (I use Bob’s Red Mill Egg Replacement)*
  • ¼ tsp cinnamon
  • 1 tsp vanilla extract
  • Coconut oil for frying

Cream Cheese Filling

  • 2 cups raw soaked cashews**
  • ¼ cup maple syrup
  • Juice from 1 lemon
  • 2 tsp vanilla extract
  • Non-dairy milk to thin if needed

Spiced Apples

  • 4 peeled medium apples
  • ¾ cup maple syrup
  • 1 tsp coconut oil
  • 1 tsp cinnamon
  • 1 tsp nutmeg

How To:

  1. Start by preparing your cream cheese filling, to a high speed blender add your soaked raw cashews, maple syrup, lemon juice and vanilla extract. Blend until smooth, scraping down sides as needed. If the mixture is too thick and won’t blend, add a small amount of non-dairy milk to thin if needed.
  2. Remove cream cheese mixture from the blender and add to a jar to store in the fridge to cool until needed.
  3. Next, prepare your spiced apples. Peel and slice your apples into thin strips. Then, add to a small saucepan with 1 tsp of coconut oil. Cook until apples begin to soften. Then, add your maple syrup, cinnamon and nutmeg. Cook down until mixture becomes thick.
  4. Once apples are cooked, remove from heat. Now, prepare your french toast batter. To a wide and shallow bowl add your vegan egg replacement and 2 tbsp of water. Whisk to combine.
  5. To the egg mixture add your non-dairy milk, cinnamon and vanilla, whisk until fully combined.
  6. Next, heat up 1-2 tsp of coconut oil in a skillet on medium heat. Place 1 slice of bread in the mixture and let soak on each side. Then add to the skillet and cook until brown and crispy on each side.
  7. Repeat this step until all of your bread is cooked, adding more coconut oil if needed throughout to prevent sticking.
  8. Once your french toast is cooked, assemble by layering 1 slice of bread, a dollop of cream cheese, then another slice of bread. Top with warm spiced apples and add another drizzle of maple syrup on top. Serve warm and enjoy!

*If you don’t have a store bought egg replacement, you can also use ground flax seed, mix 1 tbsp ground flax seed with 2 tbsp of water to create 1 vegan egg. **If you do not have time to soak your raw cashews, add to a small pot and boil in water for 10-15 minutes until they are soft.
