Apple Spice Muffins

Apples are a favorite of mine in the fall, I put them in almost everything! Gluten, refined sugar free and vegan, these muffins are the perfect grab and go start to any morning breakfast or snack! They are also a great meal prep option!

  • 2 cups gluten free 1:1 flour
  • 1 cup coconut sugar (or can sub cane sugar)
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp sea salt
  • 1 cup non dairy milk
  • 1/2 cup melted coconut oil or vegetable oil
  • 1 tbsp apple cider vinegar
  • 2 tsp vanilla extract
  • 1 medium peeled and diced apple

Serving Suggestion:

Serve warm topped with a sprinkle of cinnamon or a spread of your favorite nut butter!

How To:

  1. Start by preheating your oven to 375 degrees Fahrenheit. Then, line or grease your muffin tin and set aside.
  2. To a medium sized mixing bowl, add all of your dry ingredients, gluten free flour, sugar, baking powder, baking soda, cinnamon and sea salt. Whisk until combined.
  3. Then, in a separate mixing bowl, add all of your wet ingredients, including, nondairy milk, oil, apple cider vinegar and vanilla extract. Stir until fully combined.
  4. Add your wet ingredients to your dry ingredients and stir until the mixture is uniform. Then, fold in your peeled and diced apple.
  5. Using a cookie dough scoop or spoon, evenly scoop muffin batter into the lined muffin tin until all of the batter is used.
  6. Place muffin tray into the oven and bake at 375 for 25-30 minutes, or until the tops of the muffins are golden brown.
  7. Remove from the oven and let cool for at least 10-15 minutes before you serve.
  8. Serve warm topped with your favorite nut butter or spread! 
  9. These muffins will last up to 7-10 days in an air tight container.
