Apple Pie Baked Oatmeal

Sweet and spiced, these dump and bake apple bake oats are the perfect meal prep weekday breakfast! Hearty oats mixed with crisp apple, sweet maple and warm spices make for the best early fall morning.

  • 3 cups gluten free rolled oats
  • 3 medium diced apples
  • 2 1/2 cups non-dairy vanilla milk
  • ⅓ cup maple syrup
  • 6 chopped and pitted dates (or raisins)
  • ½ cup chopped walnuts or pecans
  • 2 vegan flax eggs (2 tbsp ground flax meal + 4 tbsp water mixed)
  • 1 ½ tsp cinnamon
  • 1 tsp nutmeg
  • 1 tsp vanilla extract
  • ¼ tsp salt



Serving Suggestion:

Serve with warm non-dairy milk, nut butter, maple syrup, chopped nuts or fresh fruit!

How To:

  1. Preheat your oven to 350 degrees and grease a medium sized baking dish or line with parchment paper.
  2. In a large mixing bowl, prepare your vegan flax egg by whisking together the flax meal with water. To the same bowl add your non-dairy milk, maple syrup, cinnamon, nutmeg, vanilla extract and salt, whisk until fully combined.
  3. Next, add your rolled oats, diced apple, chopped dates, chopped nuts and stir until fully combined. Add this mixture to the baking dish.
  4. Bake for 30 minutes until the top is golden brown and the center has become firm.
  5. Remove from the oven and serve hot with toppings of choice: warmed non-dairy milk, nut butter, vegan yogurt, maple syrup, fresh banana, etc. Store this mixture in the fridge for up to 5 days.
