Apple Butter Oat Bars

Vegan, gluten and refined sugar free, these apple butter oat bars are sweet, spiced, soft and crumbly! Best warmed up for a quick breakfast, or topped with vegan vanilla ice cream for dessert!

  • 1 1/2 cups of gluten free rolled oats
  • 1 cup of almond flour (or sub coconut flour)
  • 1 cup of oat flour
  • 1/2 cup maple syrup
  • 1/2 cup melted coconut oil
  • 1 tsp cinnamon
  • 1/4 tsp sea salt
  • 1 cup Apple Butter



Serving Suggestion:

Serve warm for a to-go breakfast or top with vegan vanilla ice cream for dessert! 

How To:

  1. Start by preheating your oven to 350 degrees fahreneheit. Then, line a square baking tin with parchment paper, place off to the side.
  2. Then, to a large mixing bowl add your rolled oats, almond flour, oat flour, cinnamon and sea salt. Stir to combine.
  3. Next, to the same mixing bowl add your maple syrup and melted coconut oil. Stir again until fully combined, reserve 1/3 of this mixture off to the side.
  4. Using the other 2/3 of mixture, place in the bottom of the lined baking tin, press down to spread evenly along the bottom of the pan.
  5. Bake this layer at 350 for 20 minutes.
  6. Then, remove from the oven, layer 1 cup of the homemade apple butter evenly on top. Next, crumble and sprinkle the other 1/3 of the crumble oat mixture on top of the apple butter. This does not need to be an even layer, just sprinkle generously over the top.
  7. Place back in the oven and bake for an additional 40-45 minutes, or until the top layer is golden brown.
  8. Take out of the oven and let cool for 15-20 minutes. Remove from the baking tin and slice into 9 even bars.
  9. Can be stored in air tight container in the fridge for 1-2 weeks, best served warm.
